Queen Nanny of Jamaica led the Windward Maroons in their battles against the British colonialists. Legend says that she was considering surrender because her people had no food but she heard a voice in her head telling her to wait one more day. The following morning, she found three pumpkin seeds in her apron pocket. She planted them, they grew quickly and fruited and saved the people from starvation. The Maroons went on to win the First Maroon War and gained land rights and the recognition of their autonomy.

Pumpkin seeds are an excellent source of vitamin E, zinc, manganese, phosphorous, copper, magnesium and iron. They are a good source of B1, B3, B5, folate, selenium, potassium and fibre. They also contain B2, B6 and calcium. They are rich in omega 6 and 9 and have small amounts of omega 3. Their phytonutrients are anti-inflammatory and antioxidant. They are cardio and eye protective and help to balance hormone levels.

Pumpkin seeds can be eaten raw or roasted. They can be added to fruit salad, porridge, granola, overnight oats, flapjacks, cakes, bread and rolls, soups, salads and savoury dishes.
