Macronutrients - Legumes are rich in fibre, carbohydrates and protein. Grains are high in fibre and carbohydrates whilst amaranth, buckwheat and quinoa contain all the essential proteins. Nuts and seeds are good sources of fibre, protein and healthy fats. Foods such as seaweed, avocado and cacao are also rich in healthy fats. Starchy roots and tubers are high in carbohydrates.

Vitamins - Many red, orange and yellow fruits and vegetables are high in vitamin A. Leafy greens, such as spinach, kale and chard, are high in vitamins A, C, E and K. Vitamin C is especially high in guava, kiwi, berries and citrus. Vitamin E is highest in nuts, seeds, avocado and leafy greens. Vitamin K is found in leafy greens, broccoli and cabbage. Mushrooms (fungi) are a good source of vitamin D when grown in UV light. Good sources of B vitamins include legumes, grains, nuts, seeds and leafy greens. B12 can be found in yeast extract and nutritional yeast (fungi).

Minerals - Soy and other legumes are high in essential minerals such as calcium, magnesium, zinc, iron, selenium, potassium and sulphur. Grains contain good levels of magnesium, selenium, manganese, chromium and phosphorous. Nuts and seeds are good sources of magnesium, iron and molybdenum. Brassicas and alliums are high in sulphur. Dried fruit and cacao provide iron. Cacao is also high in magnesium, copper and zinc. Mushrooms, especially shiitake, are rich in selenium, copper and zinc. Iodine can be found in sea vegetables.
